Ingredients
1 champagne mango, peeled, seeded, and diced
1 Persian cucumber, diced
1/4 red onion, minced
3 cups arugula
1 avocado, chopped
1/2 cup blueberries
1/4 cup walnuts, toasted
1/4 cup fresh cilantro
2 tbsp lime juice
1 tsp maple syrup
3 tbsp extra virgin olive oil
1 tbsp fresh cilantro, chopped
1 tsp garlic powder
Pinch of sea salt
Dash of black pepper
Instructions
1. Whisk together the lime juice, maple syrup, olive oil, cilantro, garlic powder, salt, and pepper until the dressing is well blended.
2. Combine the mango, cucumber, red onion, arugula, avocado, blueberries, walnuts, and cilantro in a large bowl.
