Description

Soft and fluffy Lemon Ricotta Protein Pancakes with creamy ricotta, fresh lemon zest, and about 7 grams of protein per pancake. This gluten-free breakfast takes just 15 minutes from start to finish.


Ingredients

  • 1/2 cup almond flour
  • 1/4 cup tapioca flour
  • 1 tablespoon coconut flour
  • 1/2 teaspoon baking soda
  • Pinch of kosher salt
  • 1/2 cup ricotta
  • 3 large eggs
  • Zest of 1 lemon
  • 1 teaspoon vanilla extract
  • 1 tablespoon honey or maple syrup
  • Butter, for greasing the pan
  • Optional for serving: maple syrup, extra lemon zest, fresh fruit, Greek yogurt, or preferred pancake toppings

Instructions

  1. Whisk the almond flour, tapioca flour, coconut flour, baking soda, and kosher salt together in a medium bowl.
  2. In a separate bowl, whisk the ricotta, eggs, lemon zest, vanilla extract, and honey or maple syrup until combined.
  3. Pour the wet mixture into the dry ingredients and whisk just until evenly combined.
  4. Heat a skillet or griddle over medium heat and grease it with butter.
  5. Add about 1/4 cup batter for each pancake.
  6. Cook the pancakes for 2 to 3 minutes on the first side.
  7. Flip each pancake and cook for another 1 to 2 minutes, or until the center sets and the outside turns lightly golden.
  8. Serve warm with maple syrup, extra lemon zest, fresh fruit, Greek yogurt, or your preferred toppings.

Notes

This recipe makes 6 pancakes, or about 3 servings with 2 pancakes per serving.

Each pancake contains about 7 grams of protein.

The almond flour, tapioca flour, and coconut flour create a gluten-free batter with a soft and fluffy texture.

Coconut flour absorbs moisture and helps keep the batter from becoming too runny.

For more protein, add about 1 tablespoon protein powder. Add a small splash of milk or water if the batter becomes too thick.

You can replace the ricotta with higher-protein cottage cheese. Blend the cottage cheese first if you want a smoother texture.

Serve the pancakes with Greek yogurt for another protein boost.

Store leftover pancakes in a covered container in the refrigerator for 3 to 4 days.

For longer storage, cool the pancakes completely and freeze them in a single layer on a parchment-lined baking sheet. Then transfer them to a freezer-safe bag or container with parchment between the layers. Freeze for up to 3 months.

Reheat one pancake in the microwave for about 20 seconds or until warm. You can also toast the pancakes or bake them at 375°F for about 10 minutes.

For meal prep, mix the dry ingredients ahead of time and store them in sealed jars.
