Ingredients
1 cup (226g) unsalted butter, room temperature
1 ½ cups (300g) granulated sugar plus ¼ cup (50g) for rolling
3 Tbsp lemon zest
2 Tbsp fresh lemon juice
1 large egg
3 cups (360g) all-purpose flour
1 tsp baking soda
¼ tsp salt
Instructions
1. Beat butter, sugar, and lemon zest together until smooth and fluffy
2. Mix in lemon juice and egg until fully incorporated
3. Stir in flour, baking soda, and salt just until a soft dough forms
4. Cover and chill the dough for at least 30 minutes
5. Preheat oven to 350°F (175°C)
6. Scoop dough into balls and roll each in sugar
7. Place on a lined baking sheet spaced apart
8. Bake for 11 to 13 minutes until edges are lightly golden
9. Cool briefly on the pan, then transfer to a rack to cool completely
