Description
Creamy mango cheesecake bars with a buttery graham cracker crust and sweet mango swirl. This easy make ahead mango dessert works with fresh or frozen mangoes and slices into 16 bars.
Ingredients
1½ cups graham cracker crumbs, about 10 graham cracker rectangles
¼ cup butter, melted
2 tablespoons brown sugar
Pinch of salt
1 cup mango purée, divided
1 pound cream cheese, softened
½ cup plus 1 tablespoon granulated sugar, divided
1 tablespoon flour or ½ tablespoon cornstarch
1 teaspoon vanilla extract
2 eggs, room temperature
Instructions
1. Cook the mango purée with 1 tablespoon sugar over medium heat for about 15 minutes until slightly thickened, stirring often. Cool completely.
2. Preheat oven to 325°F or 165°C. Line and grease an 8×8 inch baking pan with parchment paper.
3. Mix graham cracker crumbs, melted butter, brown sugar, and salt until evenly combined. Firmly press into the pan and bake for 10 minutes. Let cool.
4. Beat cream cheese, ½ cup mango purée, remaining sugar, flour or cornstarch, salt, and vanilla until smooth.
5. Add eggs and mix just until incorporated.
6. Spread cheesecake filling over the cooled crust.
7. Spoon the remaining mango purée on top and swirl gently.
8. Bake for 30 to 32 minutes until the center is set but not wet.
9. Cool completely at room temperature, then refrigerate for at least 4 hours before slicing and serving.
Notes
Use sweet, smooth mangoes without fibers. Fresh or frozen mangoes both work well.
About 6 tablespoons of mango jam can replace homemade mango purée.
Digestive biscuits, vanilla wafers, or Biscoff cookies can replace graham crackers.
Flour or cornstarch helps create firmer bars that slice neatly. Omit for a softer texture.
Room temperature ingredients help create a smooth cheesecake filling without lumps.
Allow the cheesecake to cool uncovered to avoid condensation and soggy crusts.
Bake at a lower temperature to help prevent cracks without needing a water bath.
Store refrigerated before serving for cleaner slices and best texture.
Frozen bars should be wrapped tightly and thawed slowly in the refrigerator before serving.
