Description
A creamy, tropical, dairy-free Mango Coconut Milk Smoothie made with frozen mango, banana, coconut milk, and lemon juice. Ready in 3 minutes.
Ingredients
2 cups frozen mango
1 medium banana, sliced
1 cup coconut milk
1 teaspoon lemon juice
2 teaspoons honey or maple syrup, optional
Ice cubes as needed
Instructions
1. Place 1 cup of frozen mango in a blender with the banana, coconut milk, lemon juice, and sweetener if using.
2. Blend until smooth, pausing to scrape down the sides if needed.
3. Add the remaining mango and blend again until fully creamy.
4. Blend in a few ice cubes if you want a thicker texture.
5. Serve immediately.
Notes
Coconut milk creates a richer and creamier texture than coconut water.
Carton coconut milk tastes lighter, while canned coconut milk makes the smoothie thicker and higher in fat.
Sweetener may not be needed if the mango and banana taste ripe and sweet.
Adjust the thickness by adding ice for a thicker smoothie or more coconut milk for a thinner drink.
You can replace coconut milk with other dairy-free milks, though the texture will vary.
This smoothie tastes best immediately after blending.
