Description

Fresh Mango Salsa made with ripe mangos, crisp cucumber, red onion, jalapeño, cilantro, and lime. Sweet, tangy, mildly spicy, and ready in just 15 minutes.


Ingredients

2 ripe mangos, peeled, pitted, and diced

1/2 small red onion, diced

1 medium cucumber, sliced and diced

1 jalapeño pepper, seeded and finely diced

1/4 cup finely chopped cilantro leaves

1 lime, juiced, about 2 tablespoons juice

1/4 teaspoon kosher salt


Instructions

1. Combine the diced mango, red onion, cucumber, jalapeño, cilantro, lime juice, and kosher salt in a mixing bowl.

2. Stir gently until all ingredients are evenly mixed.

3. Let the salsa rest for about 10 minutes so the flavors can blend, or serve immediately.

Notes

Use ripe mangos with soft flesh for the best flavor and texture.

For less heat, use half a jalapeño or leave it out completely.

Parsley can replace cilantro if preferred.

Adjust the amount of lime juice and jalapeño to taste.

Refrigerate leftovers in an airtight container for 4 to 5 days.

Before serving stored salsa, stir it well and refresh it with a little lime juice and salt.
