Description
Fresh and bright Marinated White Beans with lemon, fresh herbs, roasted red peppers, garlic, and extra virgin olive oil. This easy Mediterranean-style recipe needs only 10 minutes of prep and works well for lunch, salads, toast, crostini, or as a flavorful side dish.
Ingredients
2 (15-ounce) cans white beans, drained and rinsed
1/2 cup chopped fresh herbs, such as parsley, cilantro, basil, dill, tarragon, or mint
2 roasted red peppers, finely diced
1/3 cup shallot, finely diced
2 garlic cloves, minced
1/2 cup extra-virgin olive oil
1 lemon, zested and juiced, about 3 tablespoons juice and 1 teaspoon zest
1/2 teaspoon kosher salt
1/4 teaspoon red pepper flakes
Ground black pepper, to taste
Instructions
1. Combine the drained white beans, fresh herbs, roasted red peppers, shallot, and garlic in a large bowl.
2. Add the extra-virgin olive oil, lemon juice, lemon zest, kosher salt, red pepper flakes, and black pepper.
3. Gently toss everything until the beans and vegetables are evenly coated with the marinade.
4. Cover the bowl and refrigerate for at least 2 hours. For deeper flavor, refrigerate overnight.
5. Toss the Marinated White Beans again before serving.
6. Transfer leftovers to a sealed container and refrigerate.
Notes
Navy beans work especially well because their smaller size and firm texture help them hold their shape.
Cannellini, Great Northern, or butter beans also work well.
Use fresh herbs instead of dried herbs for the freshest flavor and texture.
You can change the herb combination according to your preference.
Fresh red bell pepper can replace roasted red pepper. However, it gives the recipe a crunchier and more vegetal flavor instead of the softer, sweeter, slightly smoky taste of roasted peppers.
For deeper flavor, marinate the beans overnight.
Store leftovers in a sealed container in the refrigerator for 3 to 4 days.
Serve the beans on their own, over toast, on crostini, in leafy salads, or with grilled meat, chicken, shrimp, or fish.
