Description

These Matcha Pistachio Energy Balls combine creamy cashews, crunchy pistachios, sweet Medjool dates, coconut, and earthy matcha. They require no baking and make an easy breakfast bite or snack.


Ingredients

3/4 cup raw cashews

1/4 cup raw shelled pistachios

12 pitted Medjool dates

1/4 cup unsweetened shredded coconut

2 teaspoons matcha powder

1 tablespoon coconut oil

1/4 cup roughly chopped pistachios, for coating


Instructions

1. Add the cashews, shelled pistachios, Medjool dates, shredded coconut, matcha powder, and coconut oil to a food processor.

2. Process for about 1 minute until the ingredients are finely chopped and evenly combined.

3. Portion the mixture and roll it between your hands into 14 evenly sized balls. A medium cookie scoop can help create even portions.

4. Roll each ball in the roughly chopped pistachios, pressing gently so the nuts stick to the surface.

5. Refrigerate the energy balls for about 15 minutes to firm before serving.

Notes

For extra sweetness, add a small amount of honey.

Replace the shredded coconut with additional dates if preferred.

Swap the coconut oil for avocado oil if needed.

Replace the cashews with another preferred nut.

The balls can be eaten immediately, but they hold together better after chilling.

Store the energy balls in an airtight container in the refrigerator for up to 1 week.

For longer storage, separate layers with parchment or wax paper and freeze in a sealed container for up to 3 months.

Thaw frozen energy balls overnight in the refrigerator before serving.
