Description

Mini Shortcake Cups are quick no bake 4th of July dessert cups made with angel food cake, fresh strawberries, blueberries, and whipped cream. They are chilled, portable, party friendly, and ready in about 10 minutes.


Ingredients

Scale

4 cups angel food cake, cut into cubes

1 cup strawberries, chopped

1 cup blueberries

2 cups whipped cream

Sliced strawberries for garnish


Instructions

1. Place cubes of angel food cake into the bottoms of small plastic cups.

2. Add layers of chopped strawberries and blueberries.

3. Top each cup with a generous spoonful of whipped cream.

4. Finish with sliced strawberries for garnish.

5. Refrigerate until ready to serve.

Notes

Whipped cream can be added a few hours before serving, but freshly whipped cream without stabilizers may deflate over time.

Keep cups refrigerated until serving.

Different berries such as raspberries or blackberries can be substituted.

Pound cake or white cake can replace angel food cake if preferred.

Best served chilled.

Serve in small plastic snack cups with spoons for easy party serving.
