Description
No Bake Summer Berry Lasagna is a creamy red, white, and blue layered dessert with strawberry cheesecake filling, blueberry gelatin salad, whipped cream, and a red velvet graham cracker crust. It is perfect for Fourth of July, Memorial Day, and summer parties.
Ingredients
For whipped cream:
1 2/3 cups chilled heavy cream
About 1/3 cup powdered sugar
1 teaspoon vanilla extract
For red velvet crust:
3 cups graham cracker crumbs
1/4 cup strawberry jam
1/2 cup plus 2 tablespoons melted unsalted butter
Red gel food coloring
For cheesecake layer:
1/2 cup softened unsalted butter
8 oz softened cream cheese
1 cup powdered sugar
1 teaspoon vanilla extract
2/3 cup diced fresh strawberries
1 cup whipped cream
For blueberry jello salad layer:
Two 3 oz packages berry blue gelatin
1 1/4 cups boiling water
2 cups blueberry pie filling
1 cup drained crushed pineapple
For topping:
2 1/2 cups whipped cream
Fresh halved strawberries
Fresh blueberries
1/4 cup chocolate chips
Instructions
1. Whip chilled heavy cream with powdered sugar and vanilla until stiff peaks form, then refrigerate.
2. Combine graham cracker crumbs, strawberry jam, melted butter, and a few drops of red gel food coloring until evenly mixed.
3. Firmly press the crust mixture into the bottom of a 9×13 inch dish and chill.
4. Beat softened butter, cream cheese, powdered sugar, and vanilla until smooth.
5. Fold in whipped cream, then gently mix in diced strawberries.
6. Spread the strawberry cheesecake layer over the chilled crust and refrigerate.
7. Dissolve blue gelatin in boiling water and let it cool slightly.
8. Stir in blueberry pie filling and drained crushed pineapple until combined.
9. Spread the blueberry gelatin mixture over the cheesecake layer and refrigerate until set.
10. Top with whipped cream, fresh strawberries, fresh blueberries, and melted chocolate drizzle or chocolate curls before serving.
11. Chill several hours or overnight for best texture and clean slices.
Notes
Use softened cream cheese and butter for a smoother filling.
Allow each layer to chill before adding the next to keep the layers distinct.
This dessert tastes best after chilling overnight.
Store covered in the refrigerator.
Frozen whipped topping can be used instead of homemade whipped cream.
