Description
These Pancake Tacos with Fruit turn soft, foldable pancakes into a fun handheld breakfast filled with vanilla Greek yogurt, fresh berries, and a smooth chocolate drizzle. They come together in 15 minutes and taste best fresh.
Ingredients
1 cup all-purpose flour
1 tablespoon sugar
2 teaspoons baking powder
1/8 teaspoon salt
1 1/4 cups milk
1 large egg or 2 tablespoons applesauce
1 teaspoon vanilla bean paste or vanilla extract
Cooking spray
1 cup blueberries
1 cup raspberries
1 cup strawberries, sliced
1 cup vanilla Greek yogurt
1/3 cup semi-sweet chocolate chips
1 tablespoon heavy cream
Instructions
1. Heat a griddle over medium-low heat and warm the oven so you can keep cooked pancakes hot.
2. Mix the flour, baking powder, and salt in one bowl.
3. In another bowl, combine the sugar, milk, egg or applesauce, and vanilla.
4. Stir the wet mixture into the dry ingredients until smooth.
5. Lightly grease the griddle with cooking spray.
6. Pour about 1/4 cup batter onto the griddle for each pancake.
7. Cook until bubbles form and the edges set, then flip.
8. Cook until golden on both sides.
9. Transfer cooked pancakes to the warm oven while you finish the rest.
10. Melt the chocolate chips with heavy cream in short microwave intervals, stirring until smooth.
11. Spread vanilla Greek yogurt along the center of each pancake.
12. Add blueberries, raspberries, and sliced strawberries.
13. Drizzle with melted chocolate.
14. Fold each pancake into a taco shape and serve fresh.
Notes
If the batter becomes too thick, thin it with a small amount of milk so the pancakes stay flexible enough to fold.
Let the batter rest briefly for better flavor.
