Patriotic Ice Cream Sandwiches are a quick 4th of July dessert made with chocolate chip cookies, vanilla ice cream, and red, white, and blue sprinkles. They are creamy, crunchy, festive, and easy to make ahead.
Ingredients
2 chocolate chip cookies, homemade or store bought
1 generous scoop vanilla ice cream
2 tablespoons red, white, and blue sprinkles
Instructions
1. Place the sprinkles in a shallow dish.
2. Let the ice cream sit briefly until slightly softened.
3. Scoop a generous portion of ice cream onto the flat side of one cookie.
4. Top with the second cookie and gently press to form a sandwich.
5. If the ice cream spreads unevenly, smooth the edges with a spatula.
6. Roll the exposed ice cream edges in the sprinkles.
7. Wrap the sandwich and freeze until firm.
Notes
You can eat the sandwich right away, but the filling may slide out more easily.
Freezing for a few hours helps the sandwich hold its shape and makes it easier to eat.
Use homemade or store bought chocolate chip cookies.
Soft cookies work best for a tender bite.
