Description

Creamy Patriotic Mini Cheesecakes with a crunchy Golden Oreo crust, red white and blue sprinkles, and whipped cream topping. Perfect make ahead 4th of July party desserts.


Ingredients

32 oz cream cheese, softened

1 cup granulated sugar

1 tsp vanilla extract

4 large eggs

1/3 cup red, white, and blue sprinkles for batter

36 Golden Oreos

1/3 cup red, white, and blue sprinkles for topping

Whipped cream for garnish

Extra sprinkles for garnish


Instructions

1. Preheat oven to 350°F.

2. Mix softened cream cheese, sugar, and vanilla until smooth and creamy.

3. Add eggs one at a time on low speed, mixing only until combined.

4. Fold sprinkles gently into the batter.

5. Line a standard 12 cup muffin pan with cupcake liners and place one Golden Oreo in each liner.

6. Fill liners about three quarters full with cheesecake batter.

7. Sprinkle extra decorations over the tops.

8. Bake for 15 to 20 minutes until centers are nearly set.

9. Allow cheesecakes to cool completely, then refrigerate for 2 hours.

10. Top with whipped cream and more sprinkles before serving.

Notes

Use a regular muffin tin, not a mini muffin pan.

Cream cheese should sit at room temperature to avoid lumps.

Store leftovers in an airtight container in the refrigerator for up to 4 days.
