Description
A fresh Peach Berry Summer Salad with juicy peaches, blueberries, crisp cucumber, feta, pecans, lettuce, and a bright lemon basil honey dressing.
Ingredients
1/2 pint fresh blueberries
1 to 2 fresh peaches, white flesh or any variety, sliced
1/2 English cucumber, sliced
1/2 cup feta crumbles
1/4 cup raw pecans, roughly chopped
1 head green leaf lettuce, washed, dried, and torn
1 head Boston lettuce, washed, dried, and torn
3 tablespoons fresh lemon juice
1 tablespoon Dijon mustard
1 tablespoon honey
1 tablespoon olive oil
1 tablespoon fresh basil, thinly sliced
Salt and pepper, to taste
Instructions
1. Whisk or shake together the lemon juice, Dijon mustard, honey, olive oil, basil, salt, and pepper until smooth.
2. Set the dressing aside.
3. Wash, dry, and tear both lettuces into bite sized pieces.
4. Slice the peaches, remove the pits, and cut the cucumber into rounds or half moons.
5. Roughly chop the pecans and crumble the feta if needed.
6. Arrange the lettuces in a serving bowl.
7. Layer on the peaches, blueberries, cucumber, pecans, and feta.
8. Drizzle with the dressing immediately before serving.
9. Toss gently and serve right away.
Notes
Dry the lettuce thoroughly before assembling to keep the salad crisp.
Using both green leaf and Boston lettuce creates better texture and flavor.
Fresh, ripe produce gives the best results.
Freshly crumbled feta tastes best.
Homemade dressing works better than bottled vinaigrette.
Dress the salad only right before serving to prevent sogginess.
