Description
Peach Bruschetta with Whipped Ricotta is a fresh summer appetizer that combines juicy peaches, creamy whipped ricotta, and crispy toasted bread with a touch of garlic and basil.
Ingredients
1 baguette sliced into 1/2 inch pieces
1/4 cup unsalted butter
4 garlic cloves minced
Salt and pepper to taste
3 medium peaches diced
1 pint tomatoes chopped
2 tablespoons extra virgin olive oil
Juice of 1/2 lemon
Fresh basil sliced or chopped
1 cup ricotta cheese
Balsamic glaze for drizzling optional
Instructions
1. Preheat oven to 400 degrees Fahrenheit and slice the baguette evenly
2. Mix softened butter with part of the minced garlic and a pinch of salt then spread onto bread slices
3. Bake until the bread is crisp and golden about 10 to 15 minutes
4. Combine peaches tomatoes remaining garlic olive oil lemon juice salt and pepper then let sit briefly
5. Blend ricotta until smooth and airy
6. Stir fresh basil into the peach mixture
7. Spread whipped ricotta on toasted bread then add the peach mixture on top
8. Finish with balsamic glaze if using and serve immediately
Notes
Use ripe but firm peaches to avoid excess moisture
Drain ricotta before whipping for a thicker texture
Assemble just before serving to keep bread crisp
Balsamic glaze adds extra sweetness and tang but is optional
Prepare bread topping and ricotta separately ahead of time for easy assembly
