Description
Creamy Pina Colada Milkshakes blend vanilla ice cream, pineapple, coconut milk, cream of coconut, and rum into a thick tropical summer drink.
Ingredients
2½ cups vanilla ice cream
8 ounces crushed pineapple in pineapple juice, undrained
¼ cup coconut milk
¼ cup cream of coconut
2 tablespoons cream of coconut, for coating glass rims
¼ cup rum
Shredded sweetened coconut flakes
Whipped cream, for garnish
Maraschino cherries, for garnish
Instructions
1. Place 2 tablespoons cream of coconut on a shallow plate and the coconut flakes in a separate shallow bowl.
2. Dip the rims of serving glasses into the cream of coconut, then coat with coconut flakes.
3. Add the ice cream, crushed pineapple with juice, coconut milk, ¼ cup cream of coconut, and rum to a blender.
4. Blend until smooth and creamy.
5. Pour into the prepared glasses.
6. Top with whipped cream and maraschino cherries if desired.
7. Serve immediately.
Notes
For a non-alcoholic version, replace the rum with an equal amount of milk to maintain the same texture and consistency.
White rum or gold rum work best.
Whole milk can be used instead of coconut milk, though the coconut flavor will be less pronounced.
Serve immediately after blending for best results.
