Description
A tropical, wine-based Pina Colada Sangria with pineapple juice, white wine, coconut rum, chopped pineapple, and maraschino cherries. Ready in 5 minutes, plus optional chilling time.
Ingredients
1½ cups (354 ml) pineapple juice
1½ bottles (750 ml each) white wine, preferably moscato
1 cup (236 ml) coconut rum
1½ cups chopped pineapple, canned or fresh
½ cup maraschino cherries with a small amount of cherry juice
Instructions
1. Combine pineapple juice, white wine, coconut rum, chopped pineapple, and maraschino cherries in a large pitcher.
2. Stir well until evenly mixed.
3. For best flavor, chill in the refrigerator for at least 1 hour or overnight.
4. If serving immediately, pour over ice in individual glasses.
Notes
For immediate serving, use pre-chilled wine and add ice directly to serving glasses rather than the pitcher to prevent dilution.
For a sparkling version, substitute sparkling wine or add club soda before serving.
Best consumed within 3 days when fruit remains in the drink.
For longer storage, remove the fruit and keep the liquid refrigerated in a sealed container.
Using canned pineapple is convenient because it provides both pineapple pieces and juice.
Optional garnish: coat glass rims with corn syrup and shredded coconut for a coconut-rim effect.
