Ingredients
3 cups fresh pineapple juice, from about 1 pineapple, or unsweetened canned juice
2 tablespoons sugar, optional
1/4 cup milk
1/3 cup heavy cream
1 tablespoon fresh lemon juice
1 cup sparkling water, club soda or seltzer
Ice cubes
Coconut flakes, for garnish
Optional pineapple chunks, for garnish
Optional fresh mint, for garnish
Optional 1 ounce gin per glass for an adult version
Instructions
1. Combine pineapple juice, milk, heavy cream, and lemon juice in a large pitcher.
2. Stir in sugar if using until dissolved.
3. Add ice cubes.
4. Slowly pour in the sparkling water to preserve the carbonation.
5. Gently mix without over-stirring.
6. Pour into 3 glasses.
7. Garnish with coconut flakes.
8. Serve immediately while cold and fizzy.
