Description

This Pitaya Smoothie Bowl is thick, creamy, refreshing, and ready in just 5 minutes. Frozen dragon fruit, banana, and mixed berries blend with coconut water or almond milk for an easy breakfast or snack.


Ingredients

  • 1 cup frozen pitaya (dragon fruit) cubes, or 1 frozen pitaya packet
  • 1 frozen banana
  • 1 cup frozen mixed berries
  • 1/4 to 1/2 cup coconut water or almond milk
  • Optional toppings: fresh fruit, nuts, seeds, coconut flakes, nut or seed butter, or chia pudding

Instructions

  1. Combine the frozen pitaya, frozen banana, mixed berries, and 1/4 cup coconut water or almond milk in a high-powered blender.
  2. Blend on high for about 1 minute, using a tamper as needed to move the frozen fruit toward the blades.
  3. Add a little more liquid only if needed, keeping the mixture thick and spoonable.
  4. Stop blending as soon as the mixture turns smooth and creamy.
  5. Transfer the smoothie mixture to a bowl.
  6. Finish with your preferred fresh fruit, nuts, seeds, coconut flakes, nut or seed butter, or chia pudding.

Notes

For a thicker Pitaya Smoothie Bowl, use fully frozen fruit and start with only 1/4 cup liquid.

Avoid blending longer than necessary because extra blending can thin the mixture.

Coconut water creates a lighter, more refreshing base, while almond milk makes the bowl creamier.

A food processor can be used instead of a blender.

Different frozen fruits can replace the mixed berries, although they may change the final color.

Freeze the smoothie bowl base in a covered container for up to 3 months.

To serve from frozen, let the base soften slightly at room temperature, stir well, and add fresh toppings.

A thawed bowl will have a more fluid texture than a freshly blended bowl.
