2 teaspoons baking powder

3/4 cup granulated sugar

1 teaspoon ground cinnamon

1/4 teaspoon ground cloves

1/4 teaspoon ground ginger

1 cup canned pure pumpkin, not pumpkin pie filling

1/4 cup vegetable oil

1 teaspoon vanilla extract

1 cup brown sugar

1/2 teaspoon ground cinnamon

1 1/2 cups very hot or boiling water


Instructions

1. Preheat the oven to 350°F (175°C) and coat a 9×13-inch baking dish with cooking spray.

2. Whisk the flour, baking powder, salt, granulated sugar, cinnamon, nutmeg, cloves, and ginger together in a large bowl.

3. Stir in the pumpkin, vegetable oil, and vanilla until combined. The batter will be thick.

4. Spread the pumpkin batter evenly in the prepared baking dish.

5. Mix the brown sugar with 1/2 teaspoon cinnamon, then distribute the mixture evenly over the batter.

6. Carefully pour the very hot or boiling water evenly over the top. Do not stir.

7. Bake uncovered for 50 to 55 minutes, until the cake layer has risen, set, and turned golden while a caramel-style sauce forms underneath.

8. Let the Pumpkin Cobbler rest for 5 to 10 minutes before serving.

9. Serve warm with vanilla ice cream, whipped cream, or chocolate chips if desired.

Notes

Use 100% pure canned pumpkin rather than pumpkin pie filling because pumpkin pie filling already contains added sugar and spices.

Fresh pumpkin puree can replace canned pumpkin if it is smooth and not watery.

Do not stir the cobbler after pouring the hot water over the topping. Leaving the layers undisturbed helps the sauce form underneath.

Use very hot or boiling water for the best caramel-style sauce.

Let the baked cobbler rest for 5 to 10 minutes so the sauce can thicken slightly.

For a gluten-free version, use a 1:1 gluten-free baking flour that contains xanthan gum and check that the remaining ingredients are gluten-free.
