Description

Soft, colorful Red, White and Blue Cookie Sandwiches made with cake-like vanilla cookies and creamy patriotic buttercream. Perfect for the 4th of July, Memorial Day, and summer parties.


Ingredients

1 3/4 cups (228 g) all-purpose flour

1 1/4 tsp baking powder

1/4 tsp salt

1/2 cup (112 g) unsalted butter, softened

1 cup (207 g) sugar

1 large egg

1/2 cup (120 ml) milk

Red gel food coloring

Blue gel food coloring

1 1/4 cups (280 g) unsalted butter, softened

5 cups (575 g) powdered sugar

1 1/4 tsp vanilla extract

12 tbsp milk or water

Red gel food coloring

Blue gel food coloring

Star sprinkles


Instructions

1. Preheat oven to 350°F (190°C) and line baking sheets with parchment paper or silicone mats.

2. Whisk together flour, baking powder, and salt.

3. Beat butter and sugar until pale and fluffy, then mix in egg and milk.

4. Add dry ingredients and stir until a smooth dough forms.

5. Split dough into two portions and tint one red and the other blue.

6. Scoop or pipe tablespoon-sized portions onto prepared baking sheets.

7. Bake for 6–8 minutes until edges are just starting to color. Let cookies rest briefly on the pan before cooling fully on a wire rack.

8. For the frosting, beat butter until creamy. Mix in half the powdered sugar, then add vanilla and milk.

9. Blend in remaining powdered sugar until smooth.

10. Keep half the frosting white, then color one-quarter red and one-quarter blue.

11. Pipe frosting between two cookies to make sandwiches.

12. Decorate edges with star sprinkles if desired.

Notes

The cookie dough is soft enough to pipe with a large round tip for faster portioning.

Do not overbake; the cookies should stay soft and cake-like.

Room-temperature ingredients help create a smoother batter and frosting.

2% or whole milk both work well in the recipe.

Chill assembled cookies if serving outdoors on a hot day.
