Description

Fresh, colorful Red, White and Blue Fruit Salad with strawberries, cherries, watermelon, blueberries, white peaches or jicama stars, and a sweet tangy lime mint dressing. Perfect for July 4th, Memorial Day, Labor Day, picnics, and summer cookouts.


Ingredients

Scale

6 ounces strawberries, hulled and halved or quartered

2 cups cherries, pitted and halved, or raspberries as a substitute

1/2 mini seedless watermelon, cubed

1 pint blueberries

4 peeled and sliced white peaches or 1 pound jicama cut into 1/4 inch rounds

Juice of 2 limes

1 large handful fresh mint leaves, plus extra for garnish

1 to 2 tablespoons maple syrup


Instructions

1. Combine strawberries, cherries, watermelon, and blueberries in a large serving bowl.

2. Cut jicama into star shapes using a small cookie cutter and place on top of the fruit mixture, or use sliced white peaches instead.

3. Blend lime juice, mint, and 1 tablespoon maple syrup until smooth.

4. Taste the dressing and add more maple syrup if needed.

5. Right before serving, drizzle part of the dressing over the salad and toss gently.

6. Add more dressing to taste and garnish with fresh mint.

7. Serve immediately for the best fresh flavor and texture.

Notes

Serve the dressing just before eating to keep the fruit fresh and prevent sogginess.

Additional fruits such as raspberries, red grapes, pomegranate seeds, bananas, apples, or white peaches can be used.

Watermelon can also be cut into star shapes for a more festive presentation.

The dressing has a sweet and tangy mojito inspired flavor.
