Description

These Red White and Blue Mini Fruit Pizzas are soft sugar cookie bites topped with creamy vanilla cream cheese frosting, fresh blueberries, and diced strawberries. They make a fun, festive 4th of July dessert that guests can grab and enjoy easily.

Ingredients

Scale

1/2 cup unsalted butter, softened

3/4 cup granulated sugar

1 large egg, room temperature

2 teaspoons vanilla extract

1 1/2 cups all-purpose flour

1/2 teaspoon baking soda

1/4 teaspoon baking powder

1/4 teaspoon salt

6 oz cream cheese, softened

2 tablespoons unsalted butter, softened

1 1/2 cups powdered sugar

1/2 to 1 tablespoon milk

1 teaspoon vanilla extract

1 1/2 cups fresh blueberries

1 1/2 cups fresh strawberries, diced

Instructions

1. Cream softened butter with granulated sugar until smooth.

2. Mix in the egg and vanilla extract until fully incorporated.

3. In a separate bowl, combine flour, baking soda, baking powder, and salt.

4. Gently mix the dry ingredients into the wet ingredients until a dough forms.

5. Shape the dough into a ball, wrap it, and chill for at least 1 hour.

6. Preheat oven to 350°F and line baking sheets with parchment paper.

7. Roll the chilled dough to about 1/4-inch thickness.

8. Cut dough into small circles and place them spaced apart on prepared baking sheets.

9. Bake for about 10 minutes, or until the edges look lightly golden.

10. Let cookies cool briefly on the baking sheet, then transfer to a rack to cool completely.

11. Beat cream cheese and butter until smooth.

12. Mix in powdered sugar, milk, and vanilla until creamy and spreadable.

13. Spread frosting over cooled cookies.

14. Top each cookie with fresh blueberries and diced strawberries.

15. Refrigerate until ready to serve.
