Fresh, colorful, and ready in just 10 minutes, this Red, White & Blue Caprese Salad is a patriotic summer side dish with cherry tomatoes, mozzarella pearls, blueberries, basil, olive oil, and balsamic glaze.
Ingredients
2 cups cherry tomatoes, halved
8 ounces fresh mozzarella pearls, drained
2 cups fresh blueberries, rinsed
Small handful fresh basil leaves
1/4 cup balsamic glaze
1 to 2 teaspoons extra virgin olive oil
Coarse sea salt and black pepper, to taste
Instructions
1. Mix the tomatoes, mozzarella pearls, blueberries, and basil in a serving bowl until evenly combined.
2. Drizzle with olive oil and balsamic glaze.
3. Season with sea salt and freshly cracked black pepper.
4. Toss lightly before serving.
Notes
Mozzarella pearls work best because they are bite-sized and easy to serve.
Basil can be left whole, torn, sliced thinly, or chopped.
Blackberries or strawberries can replace or supplement the blueberries.
Homemade or store-bought balsamic glaze can be used.
Add the balsamic glaze right before serving for the freshest texture.
Leftovers can be refrigerated in an airtight container for 2 to 3 days.
Best served fresh for maximum texture and flavor.
Can also be assembled onto skewers for party appetizers or patriotic gatherings like the Fourth of July.
