Description

Red White & Blue Mixed Berry Yum Yum is an easy no-bake 4th of July dessert with a graham cracker crust, fluffy cream cheese filling, and bright strawberry and blueberry layers.


Ingredients

2 1/2 cups graham cracker crumbs

12 tablespoons unsalted butter, melted

2 packages cream cheese, 8 oz each, softened

1 cup confectioners’ sugar

4 cups whipping cream

2 teaspoons vanilla extract, divided

6 tablespoons granulated sugar

1 can strawberry pie filling, 21 oz

1 can blueberry pie filling, 21 oz


Instructions

1. Combine graham cracker crumbs with melted butter until evenly moistened. Reserve a small portion for topping, then press the rest firmly into a greased 9×13-inch dish to form the crust.

2. Beat the cream cheese with confectioners’ sugar and 1 teaspoon vanilla until smooth.

3. In another bowl, whip the cream with granulated sugar and remaining 1 teaspoon vanilla until stiff peaks form.

4. Gently fold the whipped cream into the cream cheese mixture.

5. Spread one-third of the cream mixture over the crust.

6. Add spoonfuls of strawberry filling across the surface, then carefully spread into an even layer.

7. Cover with another third of the cream mixture and spread evenly.

8. Add spoonfuls of blueberry filling, then gently spread into a layer.

9. Finish with the remaining cream mixture and smooth the top.

10. Sprinkle with the reserved graham cracker crumbs.

11. Cover and refrigerate overnight before slicing and serving.

Notes

Use higher-quality pie filling for more fruit in each layer.

Whipped topping can replace homemade whipped cream, though fresh whipped cream gives better flavor and texture.

Chill overnight so the layers firm up and hold together.

Shorter chilling times can cause the layers to separate when cut.

Spread fruit fillings in small dollops before smoothing to help keep the layers clean.
