Ingredients
2 tablespoons olive oil
2 medium zucchinis sliced
Salt and black pepper to taste
1.5 cups corn kernels
1 lb boneless skinless chicken breasts thinly sliced
1/2 teaspoon smoked paprika
1/2 teaspoon chili powder
1/4 teaspoon salt
Freshly ground black pepper
5 garlic cloves minced
2 tablespoons fresh lime juice
4 tablespoons butter divided
1/2 cup fresh parsley chopped
Instructions
1. Heat olive oil in a skillet over medium heat and cook sliced zucchini until lightly browned and tender then season and set aside
2. In the same pan cook the seasoned chicken without moving it first until a golden crust forms then flip and add garlic cooking until the chicken is fully done
3. Reduce heat and stir in lime juice with part of the butter until melted and coating the chicken
4. Return zucchini to the pan along with corn then add remaining butter and mix until everything is heated through and coated
5. Remove from heat sprinkle with fresh parsley and serve immediately
Notes
You can substitute chicken with turkey or lamb for variation
Add extra vegetables like bell peppers or mushrooms for more texture
Avoid freezing because zucchini becomes watery after thawing
Best served hot right after cooking for best flavor and texture
