Ingredients
4 slices thick-cut bacon diced
1 small onion diced
3 celery stalks diced
2 cloves garlic minced
1/3 cup all-purpose flour
4 cups seafood stock
1 1/2 pounds red potatoes diced small
1/4 teaspoon dried thyme
2 bay leaves
8 ounces cod cut into chunks
8 ounces raw shrimp peeled and deveined
10 ounces whole baby clams drained
8 ounces heavy cream
2 tablespoons minced parsley
Salt and pepper to taste
Instructions
1. Cook bacon in a large pot over medium heat until crisp
2. Add onion and celery and cook until softened, about 5 to 7 minutes
3. Stir in garlic and cook briefly until fragrant
4. Mix in flour to coat ingredients and cook for about 1 minute
5. Gradually add seafood stock while stirring
6. Add potatoes, thyme, and bay leaves
7. Bring to a boil, then reduce heat and simmer until potatoes are tender
8. Add cod, shrimp, and clams and cook gently until seafood is just cooked through
9. Stir in heavy cream and heat through without boiling
10. Remove bay leaves, season with salt and pepper, and garnish with parsley before serving
