Description
This shrimp salad recipe is fresh, creamy, and easy to make with tender shrimp, crisp vegetables, and a bright lemon dill dressing.
Ingredients
1 pound large raw shrimp, peeled and deveined
2 quarts water
1 lemon, halved
2 garlic cloves, smashed
1 bay leaf
Black pepper
Optional Cajun seasoning
1/2 cup diced red bell pepper
1/2 cup diced celery
1/2 cup sliced green onions
1/2 cup mayonnaise
2 tablespoons fresh lemon juice
1/4 cup fresh dill, chopped
Additional salt and pepper to taste
Instructions
1. Bring water to a boil with lemon halves, garlic, bay leaf, salt, pepper, and optional seasoning. Remove from heat.
2. Add shrimp and let cook in hot liquid for about 3 minutes until done.
3. Transfer shrimp to a plate and chill until completely cold.
4. Dice bell pepper, celery, and green onions.
5. In a bowl, mix mayonnaise, lemon juice, and fresh dill.
6. Add chilled shrimp to the bowl with vegetables and dressing.
7. Mix gently until evenly coated.
8. Refrigerate for at least one hour before serving for best flavor.
Notes
Poaching shrimp gently keeps them tender and juicy.
Freshly cooked shrimp gives the best texture and flavor.
Letting the salad rest improves taste as flavors blend.
Bell pepper can be omitted if preferred.
Do not freeze as texture will change.
