Ingredients

1 pound large shrimp (shell-on preferred)

4 tablespoons extra virgin olive oil (divided)

4 cloves garlic (minced or pressed)

1 teaspoon kosher salt

1/2 teaspoon red pepper flakes

4 tablespoons butter

1/3 cup white wine or chicken stock

2 tablespoons fresh lemon juice

1 tablespoon chopped fresh parsley


Instructions

1. Thaw shrimp in cold water, then peel, devein, rinse, and pat dry thoroughly

2. Toss shrimp with part of the olive oil, half the garlic, salt, and red pepper flakes, then let marinate for 20 minutes

3. Heat remaining olive oil in a skillet over medium heat, then cook shrimp 1 to 2 minutes per side until opaque and lightly golden, then remove from pan

4. In the same skillet, melt most of the butter, then sauté remaining garlic until fragrant

5. Add wine and lemon juice, then simmer until the sauce reduces by about half and slightly thickens

6. Return shrimp and juices to the pan, then add remaining butter and stir to coat

7. Cook briefly until heated through, then finish with chopped parsley and serve immediately

Notes

Pat shrimp very dry before cooking to avoid steaming and help achieve a good sear

Use fresh garlic for the best flavor

Large shell-on shrimp provide better taste, though tails can be removed if preferred

Do not overcook shrimp, as they turn rubbery quickly

If sauce is too watery, excess moisture from shrimp is usually the cause

Wine can be replaced with chicken broth or a mix of broth and water
