Description

Simple Grilled Chicken Caprese is an easy dinner with smoky grilled chicken, melted mozzarella, fresh tomato, basil, and sweet tangy balsamic glaze.


Ingredients

4 chicken breasts, pounded to 1/2-inch thickness

2 tbsp olive oil

1 1/2 tsp Italian seasoning

3/4 tsp garlic powder

1/2 tsp onion powder

1/2 tsp salt

1/4 tsp black pepper

4 slices fresh mozzarella

4 tomato slices, cut 1/4-inch thick

3 tbsp fresh basil, sliced into ribbons

1/2 cup balsamic vinegar

1 1/2 tbsp brown sugar


Instructions

1. Combine balsamic vinegar and brown sugar in a small saucepan. Simmer over medium heat for about 10 minutes, stirring occasionally, until reduced by half and thick enough to coat a spoon.

2. Pat the chicken dry. Mix Italian seasoning, garlic powder, onion powder, salt, and pepper. Rub chicken with olive oil and coat evenly with the seasoning mixture.

3. Preheat the grill to medium-high heat. Grill the chicken for 6 to 7 minutes per side until it reaches about 160°F internally.

4. Place a slice of mozzarella on each chicken breast, close the grill lid, and cook another 2 to 3 minutes until the cheese melts and the chicken reaches 165°F.

5. Transfer chicken to serving plates. Top with tomato slices and basil ribbons, then drizzle with the balsamic glaze before serving.

Notes

Use evenly pounded chicken breasts for more consistent cooking.

Allow the balsamic glaze to cool slightly as it thickens further while resting.

Add mozzarella only near the end of cooking to prevent it from sliding off or overmelting.

Monitor the balsamic reduction carefully to avoid burning.

Arrange the tomatoes and basil while the chicken is still warm so they soften slightly from the residual heat.

Fresh mozzarella is preferred, but regular mozzarella or provolone can be substituted.

Chicken thighs or pork chops may be used instead of chicken breasts.

Store leftovers in an airtight container in the refrigerator for up to 3 days.
