Description
Tender slow cooker chicken thighs cooked in a sweet and savory garlic honey sauce. Easy, juicy, and perfect for rice, noodles, vegetables, sandwiches, or meal prep.
Ingredients
2 pounds boneless skinless chicken thighs
1/3 cup low-sodium soy sauce
1/3 cup honey
1/3 cup ketchup
6 cloves garlic, minced
1/2 teaspoon apple cider vinegar
1 teaspoon fresh grated ginger
Pinch of crushed red pepper flakes, optional
2 tablespoons cornstarch
2 tablespoons cold water
Optional for serving: cooked rice, chopped scallions, sesame seeds
Instructions
1. Place the chicken thighs in the slow cooker in a single, even layer.
2. In a separate bowl, mix the soy sauce, honey, ketchup, garlic, apple cider vinegar, ginger, and red pepper flakes until smooth.
3. Pour the sauce mixture over the chicken.
4. Cook on high for about 3 hours and 30 minutes, or cook on low for 6 to 8 hours.
5. Near the end of cooking, stir together the cornstarch and cold water to make a slurry.
6. Add the slurry to the slow cooker and mix gently.
7. Continue cooking on high for about 15 minutes, until the sauce thickens.
8. Leave the chicken thighs whole or pull them apart with forks directly in the slow cooker.
9. Serve warm with rice, noodles, vegetables, scallions, sesame seeds, or your favorite sides.
Notes
Chicken thighs stay tender and moist during slow cooking.
Chicken breasts can work, but they may need adjusted timing and can turn less juicy.
Bone-in thighs can be used, but they need a longer cooking time.
Skin-on thighs may create a greasier sauce.
The chicken becomes very soft and may naturally fall apart.
Fresh ginger adds the best flavor and grates more easily when frozen.
Adjust the garlic to taste.
Leftovers keep in the refrigerator for 3 to 4 days in a sealed container.
Freeze leftovers for up to 3 months and thaw before reheating.
Reheat gently on the stovetop or in the microwave.
