Slow Cooker Cilantro Lime Chicken is a fresh, zesty, and juicy shredded chicken dinner made with simple ingredients. It works beautifully for tacos, burrito bowls, rice bowls, salads, lettuce wraps, and easy meal prep.
Ingredients
½ cup low-sodium chicken broth
2 teaspoons garlic powder
2 teaspoons onion powder
1 teaspoon salt
Juice of 4 limes
Zest of 1 lime
1 pound boneless skinless chicken breasts
½ to 1 cup chopped fresh cilantro
Instructions
1. Mix chicken broth, garlic powder, onion powder, salt, lime juice, and lime zest in a bowl.
2. Place chicken breasts in the slow cooker and pour the mixture over top.
3. Cook on high for 3 to 4 hours or low for 5 to 6 hours until the chicken is tender.
4. Shred the chicken directly in the cooker using two forks.
5. Stir in the cilantro.
6. Add extra lime juice if desired before serving.
Notes
Fresh lime juice gives the best flavor and avoids bitterness from bottled juice.
Zest the lime before juicing.
Keep the slow cooker lid closed while cooking to maintain heat and moisture.
Chicken thighs can replace chicken breasts without changing cook time.
Red pepper flakes can be added for heat.
The recipe can be doubled if the liquid is also doubled.
Leftovers can be refrigerated in an airtight container for up to 5 days and reheated in the microwave.
The cooked or uncooked chicken mixture can also be frozen for up to 3 months.
