Description

A fresh Stone Fruit Salad made with peaches, nectarines, plums, grapes, and mint, all tossed in a light vanilla honey syrup. Sweet, juicy, refreshing, and perfect for summer lunches, sides, or light desserts.


Ingredients

4 peaches

4 nectarines

4 plums

1 small bunch seedless grapes

68 mint leaves, finely sliced

3 tablespoons honey or maple syrup

3 tablespoons hot water

1 teaspoon vanilla extract


Instructions

1. Wash the peaches, nectarines, and plums. Cut around and remove the pits, then slice each fruit into about 8 pieces.

2. Place the sliced fruit in a large bowl. Remove the grapes from their stems and add them to the bowl with the sliced mint.

3. Combine the honey, hot water, and vanilla extract in a small container. Stir until smooth, then allow the syrup to cool.

4. Pour the cooled vanilla honey syrup over the fruit and gently toss until evenly coated.

5. Serve immediately or refrigerate until serving.

Notes

Choose ripe, in-season stone fruit for the best sweetness and texture.

You can use different varieties or combinations of peaches, nectarines, and plums.

Grilled peaches can add a smoky flavor.

Red seedless grapes add extra juiciness and a contrasting texture.

Maple syrup can replace honey.

For dessert, serve the salad with vanilla ice cream or whipped cream.

You can assemble the salad several hours ahead and keep it covered in the refrigerator.

Alternatively, slice the stone fruit up to one day ahead and refrigerate it separately. Add freshly chopped mint and syrup before serving.
