A fresh Strawberry Avocado Spinach Salad with baby spinach, juicy strawberries, creamy avocado, tangy cheese, toasted almonds, red onion, and a sweet poppy seed dressing.
Ingredients
6 cups fresh baby spinach
1 avocado, peeled, pitted, and diced
1 pint strawberries, hulled and sliced
4 ounces crumbled blue cheese, goat cheese, or feta
1/3 cup sliced almonds, toasted
1/2 small red onion, thinly sliced
1/3 cup avocado oil or olive oil
3 tablespoons red wine vinegar
2 tablespoons honey
1 tablespoon poppy seeds
1 teaspoon Dijon mustard
Fine sea salt, to taste
Freshly ground black pepper, to taste
Instructions
1. Whisk together the avocado oil, red wine vinegar, honey, poppy seeds, Dijon mustard, salt, and black pepper until smooth and combined.
2. Place the spinach, strawberries, avocado, cheese, almonds, and red onion into a large serving bowl.
3. Pour the dressing over the salad just before serving and gently toss until evenly coated.
4. Serve immediately while fresh.
Notes
The salad is best served fresh after tossing with the dressing.
Goat cheese or feta can be used instead of blue cheese.
Olive oil works well if avocado oil is unavailable.
Toasting the almonds adds extra crunch and flavor.
Add the avocado right before serving for the freshest texture.
