Ingredients
1 box strawberry cake mix (about 15.25 oz)
2 large eggs
1/3 cup vegetable oil
Sanding sugar for coating
1 cup unsalted butter
Pinch of salt
2 teaspoons vanilla extract
1/2 teaspoon almond extract
1/8 cup heavy cream
6 cups powdered sugar
Instructions
1. Preheat oven to 350°F and line a baking sheet with parchment paper.
2. Mix strawberry cake mix, eggs, and oil until a soft dough forms.
3. Scoop dough into small portions and roll into balls.
4. Coat each dough ball in sanding sugar.
5. Place cookies spaced apart on the baking sheet.
6. Bake for 7 to 9 minutes until set but still soft.
7. Cool cookies completely on a rack.
8. Beat butter until smooth and fluffy.
9. Mix in salt, vanilla extract, almond extract, and a small amount of cream.
10. Gradually add powdered sugar and whip until light and airy.
11. Adjust consistency with more cream if needed.
12. Pipe or spread buttercream onto one cookie.
13. Sandwich with another cookie and press gently.
