Description

No egg vanilla ice cream with homemade cherry filling and chocolate chunks. Creamy, fruity, and perfect for warm days.


Ingredients

For the cherry filling:

2 cups fresh cherries, pitted and halved

2 tablespoons water

2 tablespoons granulated sugar

1 tablespoon cornstarch

For the ice cream:

2 cups heavy whipping cream

1 cup whole milk

3/4 cup granulated sugar

4 teaspoons vanilla extract

Pinch of coarse sea salt

1/2 cup chocolate chunks


Instructions

1. Freeze the ice cream maker bowl 24 hours in advance if your machine requires it.

2. Combine cherries, water, sugar, and cornstarch in a saucepan.

3. Cook over medium heat for 8 to 10 minutes, stirring often, until thickened.

4. Let the cherry filling cool for about 1 hour, then refrigerate until fully chilled.

5. Whisk together heavy cream, whole milk, sugar, vanilla extract, and salt until the sugar dissolves.

6. Pour the mixture into an ice cream maker and churn according to the manufacturer’s directions, about 20 to 30 minutes.

7. As the ice cream begins to thicken, gradually add the chocolate chunks.

8. Transfer one third of the churned ice cream to a freezer safe container.

9. Add a layer of chilled cherry filling, then repeat layers until all ingredients are used.

10. Press wax paper or parchment paper directly onto the surface.

11. Seal the container and freeze for 2 to 3 hours before serving.
