Description

This fresh Strawberry Salad combines tender spring greens, juicy strawberries, creamy goat cheese, crunchy almonds, and red onion. A homemade balsamic vinaigrette adds a sweet and tangy finish. Serve it for lunch, potlucks, spring gatherings, or easy summer meals.

Ingredients

Scale

Salad:

5 ounces spring salad mix

10 strawberries, hulled and sliced

1/2 small red onion, thinly sliced

1/3 cup sliced almonds

1/3 cup crumbled goat cheese

Balsamic vinaigrette:

1/4 cup extra virgin olive oil

1/4 cup balsamic vinegar

1 tablespoon honey

2 teaspoons Dijon mustard

1 garlic clove, minced

1/4 teaspoon kosher salt

1 pinch freshly ground black pepper

Instructions

1. Add the olive oil, balsamic vinegar, honey, Dijon mustard, minced garlic, kosher salt, and black pepper to a small bowl or sealed jar.

2. Whisk the ingredients together, or seal the jar and shake it, until the vinaigrette looks smooth and well blended.

3. Place the spring salad mix in a large serving bowl.

4. Add the sliced strawberries, red onion, sliced almonds, and crumbled goat cheese.

5. Drizzle the balsamic vinaigrette over the salad.

6. Toss the salad gently until the dressing coats the ingredients evenly.

7. Serve the salad immediately so the greens stay crisp.

Notes

You can replace the spring mix with spinach or arugula.

You can replace the goat cheese with feta.

Omit the cheese for a dairy free version.

You can replace the almonds with pecans, walnuts, or sunflower seeds.

Lightly toast the almonds for more crunch and a deeper nutty flavor.

Soak the sliced red onion in cold water for 10 minutes to soften its sharp flavor.

You can replace the balsamic vinaigrette with lemon vinaigrette for a brighter citrus taste.

Add diced cooked chicken and avocado for a more filling meal.

Add the avocado shortly before serving to limit browning.

Prepare the strawberries and vinaigrette one day ahead, then refrigerate them separately.

Dress the salad just before serving so the greens do not become soggy.

Store dressed leftovers in an airtight container in the refrigerator for 1 to 2 days. The greens will soften during storage.
