Ingredients
16 ounces fresh spinach and mixed greens
16 ounces fresh strawberries, sliced with stems removed
1/2 cup crumbled cheese such as goat cheese, gorgonzola, blue cheese, feta, or queso fresco
1/2 cup chopped pecans
1/2 cup olive oil
1/3 cup balsamic vinegar
2 teaspoons maple syrup
1 teaspoon Dijon mustard
Salt and pepper to taste

The dressing recipe makes extra dressing.
For a vegan version, leave out the cheese or use plant-based cheese.
To keep the salad fresh, store ingredients separately and add dressing and nuts just before serving.
Dry spinach thoroughly before assembling to prevent wilting.
