Description
Fresh Strawberry Spinach Salad with juicy berries, creamy feta, toasted pecans, and homemade balsamic glaze. A quick 15 minute summer salad for lunches, dinners, picnics, and gatherings.
Ingredients
1 cup balsamic vinegar
1/4 cup honey or brown sugar
10 oz fresh baby spinach
3 cups strawberries, hulled and sliced
1 cup blueberries
1/3 cup feta cheese, crumbled
1 cup pecans, toasted, some chopped
Instructions
1. Heat balsamic vinegar with honey or brown sugar in a saucepan over medium heat until it gently boils.
2. Reduce the heat to a simmer and cook until the mixture reduces by about half and thickens.
3. Let the balsamic glaze cool until it reaches a syrupy consistency.
4. In a large bowl, mix spinach, strawberries, blueberries, and feta until evenly combined.
5. Portion the salad into serving bowls.
6. Add toasted pecans on top.
7. Drizzle each serving with the prepared balsamic glaze just before serving.
Notes
The dressing should coat a spoon but still pour easily.
The glaze will thicken more as it cools.
Add nuts and dressing right before serving to keep the texture crisp.
For make ahead prep, keep dressing separate and refrigerate it.
Mix salad ingredients without nuts or dressing and store chilled.
Leftovers can be refrigerated for up to 3 days, though the greens may soften.
You can swap greens, berries, cheese, or nuts.
Add chicken or shrimp to make it a full meal.
Store bought balsamic glaze or vinaigrette also works.
