Description
Strawberry Watermelon Cucumber Salad is a crisp, juicy, and refreshing summer side dish with sweet watermelon, fresh strawberries, crunchy cucumber, mint, lime, honey, and feta cheese.
Ingredients
4 cups cubed watermelon
3 cups sliced strawberries
1 English seedless cucumber, chopped
1/4 cup chopped fresh mint leaves
1 tablespoon olive oil
Juice of 1 lime
1 to 2 teaspoons honey
Sea salt, to taste
1/2 cup crumbled feta cheese
Extra mint leaves for garnish, optional
Instructions
1. Combine the watermelon, strawberries, cucumber, and mint in a large bowl.
2. In a separate small bowl or jar, mix the olive oil, lime juice, and honey until blended.
3. Pour the dressing over the salad and gently toss to coat evenly.
4. Season with sea salt as desired.
5. Finish with feta cheese and extra mint before serving.
Notes
Best served fresh and chilled.
This salad can sit for a few hours before serving.
For advance prep, cut the fruit and cucumber separately and refrigerate them in individual containers.
Make the dressing ahead and mix it in just before serving.
Basil can replace mint if preferred.
For a vegan version, omit the honey and feta cheese.
