Description

A refreshing summer salad with sweet strawberries, juicy watermelon, crisp cucumber, creamy feta, fresh mint, and a light lime dressing.

Ingredients

Scale

2 cups sliced strawberries

2 cups cubed watermelon

2 cups semi-thick cucumber slices

1/2 cup crumbled feta cheese

2 tbsp chopped fresh mint

Juice of 1 lime

1 tbsp olive oil

Pinch of sea salt

Optional: black pepper to taste

Instructions

1. Add the strawberries, watermelon, cucumber, feta, and mint to a large serving bowl.

2. In a small bowl, whisk together lime juice, olive oil, and salt.

3. Pour the dressing over the salad.

4. Gently toss until evenly coated.

5. Serve immediately for the freshest texture and flavor.

Notes

For best texture, keep the dressing separate until ready to serve.

Use ripe watermelon and fresh mint for the strongest flavor.

Feta can be replaced with goat cheese if preferred.

English or Persian cucumbers work best because they stay crisp.

Best enjoyed fresh the same day because watermelon releases liquid as it sits.

Store leftovers in an airtight container in the refrigerator for up to 1 day.
