A fresh Strawberry, Watermelon, Feta & Mint Cucumber Salad with juicy fruit, crisp cucumber, creamy feta, mint, and a bright lemon honey dressing. Perfect for lunch, BBQs, picnics, and potlucks.
Ingredients
6 cups seedless watermelon, cubed
2½ cups strawberries, hulled and sliced
1 English cucumber, diced, or 2 Persian cucumbers
¾ cup feta cheese, crumbled
¼ cup fresh mint
3 tbsp extra virgin olive oil
2 tbsp fresh lemon juice
1 tsp lemon zest
1 tsp honey or maple syrup
¼ tsp sea salt
⅛ tsp black pepper
Instructions
1. Combine the watermelon, strawberries, cucumber, feta, and mint in a large serving bowl.
2. In a separate small bowl or jar, mix the olive oil, lemon juice, lemon zest, honey, salt, and pepper until smooth.
3. Pour the dressing over the salad.
4. Gently toss until evenly coated.
5. Serve immediately, or chill for up to 30 minutes before serving for a colder, more refreshing salad.
Notes
Use chilled watermelon for the freshest flavor.
Pat watermelon dry before assembling to reduce excess liquid.
Add feta just before serving to preserve its texture.
Fresh basil can be used instead of mint.
For extra crunch, add toasted pumpkin seeds or pistachios.
