Street Corn Salad with Greek Yogurt is a creamy, tangy, and smoky summer side dish made with charred corn, fresh herbs, and a lighter Greek yogurt dressing.
Ingredients
4 ears fresh corn
2 tablespoons butter or oil
1 jalapeno diced
1/4 cup chopped cilantro
1/4 cup crumbled cotija cheese or feta or parmesan
Optional chili lime seasoning
1/4 cup plain Greek yogurt
2 garlic cloves minced
Juice of 1 lime
1/4 teaspoon chili powder
1/2 teaspoon salt
1/2 teaspoon black pepper
Instructions
1. Mix Greek yogurt, garlic, lime juice, chili powder, salt, and black pepper in a bowl until smooth
2. Cook corn in a skillet or grill with butter or oil, turning until lightly charred
3. Let the corn cool slightly, then slice kernels off the cob
4. Combine corn with jalapeno, cilantro, and cheese in a large bowl
5. Add dressing and gently toss until evenly coated
6. Sprinkle chili lime seasoning on top if desired and serve

You can prepare this salad ahead and refrigerate it
It keeps well for up to 3 days in an airtight container
For best flavor, enjoy within 1 to 2 days
