Description

Sunshine Salad is a creamy, fruity, and refreshing no-bake summer fruit salad made with fresh pineapple, mandarin oranges, bananas, and dry vanilla instant pudding mix. It is perfect for picnics, potlucks, barbecues, and summer gatherings.


Ingredients

1 fresh pineapple, cored and cut into chunks

1 can (15 oz) mandarin oranges in light syrup, undrained

2 bananas, sliced

1 box (4-serving size) sugar-free vanilla instant pudding mix


Instructions

1. Place the pineapple, mandarin oranges with their syrup, and sliced bananas in a large bowl.

2. Sprinkle the dry vanilla pudding mix directly over the fruit; do not prepare the pudding with milk.

3. Stir until the fruit is evenly coated and the pudding mix blends with the fruit juices.

4. Cover and refrigerate for at least 1 hour before serving.

Notes

Do not drain the mandarin oranges; the syrup combines with the pudding mix to create a creamy coating.

Use bananas that are mostly yellow and not overly ripe so they hold their shape better.

A pineapple corer can make preparing the pineapple easier.

Keep chilled before serving, especially for outdoor events.

One serving is approximately 1 cup.

For variations, use different Jell-O flavors such as strawberry, lime, or raspberry.

Regular vanilla pudding can be substituted for the sugar-free version.

Optional additions include Greek yogurt, whipped cream, pecans, almonds, toasted coconut, honey, maple syrup, or extra fruit such as clementines and pineapple.

For a dairy-free version, use coconut milk-based alternatives.
