Description
This Sweet Potato Burger Bowl combines golden roasted sweet potatoes, seasoned ground beef, crisp burger toppings, shredded cheese, and a creamy tangy-sweet burger sauce. It is a bun-free, high-protein dinner that also works well for meal prep.
Ingredients
Sweet Potato Mixture:
2 lb sweet potatoes, about 2 to 3, cut into 1/2-inch cubes
2 tbsp extra-virgin olive oil
1/2 tsp onion powder
1/2 tsp garlic powder
1/2 tsp paprika

Burger Meat:
1 lb lean ground beef
1/2 tsp onion powder

Creamy Burger Sauce:
1/4 cup mayonnaise
1 1/2 tbsp ketchup
1 tbsp sweet pickle relish, very finely chopped
1/2 tbsp white vinegar
Pinch of kosher salt
Toppings:
3 cups shredded lettuce
4 Roma tomatoes, deseeded and diced
1 cup shredded cheese
1/2 cup diced white onion
1/2 cup diced dill pickles
Instructions
1. Preheat the oven to 425°F (200°C). Toss the cubed sweet potatoes with olive oil, onion powder, garlic powder, paprika, salt, and pepper until evenly coated.
2. Spread the sweet potatoes in one layer on a sheet pan, leaving room between the cubes. Roast for 30 to 35 minutes, stirring halfway through, until tender with golden, lightly crisp, caramelized edges.
3. Meanwhile, cook the ground beef in a skillet over medium heat. Break the beef into crumbles as it cooks.
4. Season the beef with onion powder, garlic powder, paprika, salt, and pepper. Cook for 8 to 10 minutes until completely browned. Drain excess fat if necessary.
5. Combine the mayonnaise, ketchup, finely chopped sweet pickle relish, white vinegar, and a pinch of salt. Stir until smooth.
6. Divide the roasted sweet potatoes among four bowls.
7. Add the seasoned ground beef, shredded cheese, lettuce, tomatoes, dill pickles, and diced onion.
8. Drizzle the creamy burger sauce over each bowl and serve.
Notes
Cut the sweet potatoes into roughly 1/2-inch cubes so the centers turn tender while the edges caramelize.
Avoid crowding the sheet pan because extra space helps the sweet potatoes brown and crisp around the edges.
A 90/10 lean ground beef blend gives a good balance of flavor and leanness. An 85/15 blend also works, but you may need to drain excess fat.
Ground turkey or ground chicken can replace the beef for a leaner option.
For a dairy-free bowl, omit the cheese.
Cheddar works well for a classic burger flavor. You can also use Monterey Jack or crumbled goat cheese.
Red onion can replace white onion.
Finely chopped dill pickles can replace sweet pickle relish in the sauce if needed.
Let the prepared burger sauce rest briefly in the refrigerator so the flavors can combine.
Adjust the toppings according to your preference.
Store the prepared components separately in the refrigerator for about 4 to 5 days.
Reheat only the sweet potatoes and ground beef before adding the cold toppings.
You can prepare seasoned cooked ground beef in larger batches and freeze portions for later meals.
