Description

Ingredients

1 large sweet potato, peeled and grated

2 tablespoons grated onion

2 large eggs

1 tablespoon all-purpose flour

2 tablespoons vegetable oil

1/4 teaspoon salt

Optional pepper or seasonings


Instructions

1. Preheat oven to 175°C or 350°F

2. Rinse grated sweet potato in cold water, then drain and squeeze out all moisture

3. Combine sweet potato, onion, eggs, flour, and seasoning until mixed

4. Heat oil in a skillet over medium heat

5. Scoop mixture into pan and flatten into patties

6. Cook each side for several minutes until lightly browned

7. Transfer patties to a baking sheet

8. Bake for 10 to 12 minutes until fully cooked and crisp

9. Serve hot

Notes

Remove as much moisture as possible for crispiness

Do not overcrowd the pan while frying

Mixture should hold together but not feel overly wet

Top with sour cream, chives, or eggs if desired
