Description

This hearty Taco Soup combines ground beef, beans, corn, tomatoes, green chilies, and taco seasoning in one comforting pot. It has bold taco flavor, a broth-forward texture, and comes together in just 30 minutes.


Ingredients

1 pound ground beef

1/2 large onion, diced

1 green bell pepper, diced

1 tablespoon tomato paste

1 recipe homemade taco seasoning, or 2 tablespoons prepared taco seasoning

1 (15-ounce) can black beans, drained and rinsed

1 (15-ounce) can kidney beans, drained and rinsed

1 (15-ounce) can sweet corn, drained and rinsed

1 (15-ounce) can diced tomatoes

1 (4-ounce) can diced green chilies

3 cups water

Optional toppings: avocado, jalapeño peppers, cilantro, Cotija or other cheese, sour cream


Instructions

1. Brown the ground beef in a large pot over medium heat, then drain excess fat.

2. Add the onion, green bell pepper, taco seasoning, and tomato paste. Cook while stirring for 1 to 2 minutes, until the vegetables begin to soften and the mixture becomes fragrant.

3. Stir in the black beans, kidney beans, corn, diced tomatoes, green chilies, and water.

4. Bring to a boil, lower the heat, cover, and simmer for 20 minutes.

5. Ladle into bowls and finish with desired taco toppings.

Notes

For a vegetarian or vegan version, replace the ground beef with quinoa.

For slow cooker preparation, combine the ingredients in a slow cooker and cook on low for at least 6 hours or on high for about 4 hours.

Pinto beans can replace either of the suggested bean varieties.

Rinsing canned beans helps reduce their sodium content.

Beef broth can replace the water for a richer-tasting soup.

Refrigerate leftovers in an airtight container for 4 to 5 days or freeze in a freezer-safe container for up to 3 months.

Reheat individual portions in the microwave for about 2 to 3 minutes or warm a larger batch in a pot on the stove.
