Description

Tortellini Caprese Salad is a fresh, creamy, and hearty chilled pasta salad with cheese tortellini, cherry tomatoes, mozzarella pearls, basil, spinach, garlic, olive oil, and balsamic vinegar. It works well as an easy lunch, side dish, potluck recipe, or light meal.


Ingredients

20 oz cheese tortellini, uncooked

10 oz cherry tomatoes, halved

8 oz mozzarella pearls

1 cup chopped spinach

1/4 to 1/2 cup fresh basil, chopped

1/2 cup extra virgin olive oil

2 tbsp balsamic vinegar

3 to 4 garlic cloves, minced

3/4 tsp Italian seasoning

1/2 tsp salt

1/2 tsp black pepper

Balsamic glaze, optional


Instructions

1. Cook the tortellini according to the package directions until al dente.

2. Drain and briefly rinse with cool water to stop the cooking and cool slightly.

3. Place the tortellini in a large bowl.

4. Add spinach, tomatoes, mozzarella, basil, and garlic.

5. Mix in olive oil, balsamic vinegar, Italian seasoning, salt, and pepper.

6. Toss until evenly coated.

7. Refrigerate until serving.

8. Before serving, stir again to redistribute the dressing.

9. Drizzle with balsamic glaze if desired.

10. Add extra olive oil if the pasta absorbs too much dressing during storage.

Notes

Fresh basil and fresh mozzarella provide the best flavor and texture.

Cherry or grape tomatoes work best.

Balsamic glaze is optional but adds extra sweetness and depth.

Stir the salad before serving since the oil settles at the bottom.

If refrigerated for several hours, add more olive oil to refresh the texture.

Store in an airtight container in the refrigerator for up to 5 days.

Best served chilled or slightly cool.

Can be served as a side dish or light meal.

Optional additions include salami, pepperoni, sausage, chicken, mushrooms, peppers, red onion, sun dried tomatoes, or parmesan cheese.
