Description

This Turkey Enchilada Skillet is a quick one-pan dinner made with ground turkey, black beans, corn, red enchilada sauce, green chiles, tortilla strips, and melted cheese. It has a hearty, saucy texture with classic enchilada flavor and comes together on the stovetop in just 20 minutes.


Ingredients

1 lb ground turkey

4 corn tortillas, cut into 1-inch strips

1 (15 oz) can black beans, rinsed

1 (15 oz) can red enchilada sauce

1 (4 oz) can diced green chiles

1 red bell pepper, chopped

3/4 cup frozen corn

1/2 cup chopped white onion

1/2 cup shredded Mexican blend cheese

1 tbsp avocado oil

1 tsp cumin

Salt and pepper, to taste

Optional garnishes: cilantro, olives, queso fresco, avocado, sour cream


Instructions

1. Heat avocado oil in a large skillet. Add ground turkey, cumin, salt, and pepper. Cook until browned and fully cooked, breaking it into crumbles. Transfer to a plate.

2. In the same skillet, sauté the onion and bell pepper for about 3 minutes until slightly softened.

3. Return the turkey to the skillet and add black beans, green chiles, enchilada sauce, and corn. Cover and bring to a boil.

4. Lower the heat and stir in the tortilla strips. Sprinkle cheese over the top and cook on low until the cheese is melted.

5. Divide into 4 servings and add desired garnishes before serving.

This recipe is gluten-free when prepared as directed with corn tortillas.

Lean or extra-lean ground turkey can be used.

The enchilada sauce and other ingredients provide most of the flavor, so only minimal seasoning is needed.

Frozen corn is preferred, though sweet corn can be substituted if desired.

Flour tortillas can be used, but the texture will be different.

For freezing, the dish can likely be frozen successfully. Adding tortillas after thawing and reheating may help prevent them from becoming overly soft.
