Description

This easy homemade tzatziki is thick, creamy, and refreshing. Greek yogurt, grated cucumber, fresh dill, garlic, lemon juice, and olive oil come together in just 10 minutes for a cool Greek and Mediterranean sauce.


Ingredients

1 medium cucumber, peeled and grated

1 1/2 cups Greek yogurt

2 tablespoons fresh dill, roughly chopped

2 garlic cloves, minced

2 tablespoons extra-virgin olive oil

1 tablespoon fresh lemon juice

1/2 teaspoon kosher salt


Instructions

1. Peel and grate the cucumber, then press it firmly in a fine-mesh sieve over a bowl to remove as much liquid as possible. You can also use cheesecloth or a nut-milk bag.

2. Combine the drained cucumber with the Greek yogurt, dill, garlic, olive oil, lemon juice, and salt. Stir until evenly mixed and creamy.

3. Allow the tzatziki to rest briefly, then taste and adjust with additional salt, lemon juice, garlic, or herbs if needed. Serve right away or refrigerate for a few hours for a more developed flavor.

Notes

Drain the grated cucumber very well to keep the tzatziki thick and creamy.

Full-fat Greek yogurt gives the thickest texture, although low-fat Greek yogurt also works.

Add more garlic if you prefer a stronger garlic flavor.

Fresh dill gives tzatziki its classic herbal taste. You can also try parsley, mint, or cilantro.

Chilling the tzatziki for a few hours helps the flavors blend.

Store tzatziki in an airtight container in the refrigerator for about 4 to 5 days.

Stir before serving if a little liquid separates.

Freezing is not recommended because the cucumber can soften and the yogurt may separate after thawing.
